Peanut is an annual plant with yellow flowers 20 to 90 cm high. The leaves are composed of two or three pairs of membranous, oval leaflets. They are provided at their base with sheathing stipules. To grow, peanuts need a lot of heat. Peanut seeds are mainly used as raw material for the extraction of oils used as seasoning and in cooking and to produce peanut butter.

Focus on the shelling of peanut seeds

It is difficult to imagine putting peanut seeds in shell through the presses. We would have 25 to 35% of woody substances which are very abrasive for the press and that are without any nutritional values. The remaining shell in the almonds is also loaded with oil when it passes through the press and thus increases the loss of oil during processing.
All peanuts are therefore shelled before crushing.

 

Focus on peanut grinding

Peanut is a tender seed that does not require flattening like rapeseeds. The shelled peanut generally comes in the form of whole kernels or separated into two cotyledons. In this form, heating and cooking would be less good and we strive to have a product calibrated at the level of the grain of rice. This is obtained either by passing through hammer mills, or by passing between two fluted cylinders preferably “cut on back”; but as the quality of grinding is not important, any fluted roller, whatever its assembly, gives a sufficient result.
